When I see a recipe with the word curried in the title, it always gets my attention. I'm also a huge fan of whole-wheat couscous, so the minute I saw this recipe for Curried Couscous with Roasted Red Peppers and Peas from Healthy Seasonal Recipes, I asked Katie if I could feature it here. Don't you think all those flavors sound perfect together? You might be thinking this is a side dish, but surprise, there are cubes of organic baked tofu nestled in the couscous along with the other ingredients. If you've never tried baked tofu, that's another recipe ingredient that always makes me take a second look. Katie says she's been making this for years and I think it looks like an amazing Meatless Monday (and vegan) dinner idea.
