I'm drooling over this amazing sounding Butternut Squash, Lentil, and Kale Salad with Tahini from Oh My Veggies, and I've spotted four of my very favorite ingredients all in the same place in this vegan dish: butternut squash, lentils, kale, tahini. Oh yes, I'd absolutely gobble this up for a Meatless Monday lunch or dinner. (And if you're looking for more delicious meatless recipe ideas, Oh My Veggies has so many dishes that look good to me.)
Before I share the recipe link, may I take a personal note and tell you how happy I am to be back sharing my weekly Meatless Monday recommendations here. I fell on the ice and broke my arm on January 9, and BlogHer Food Section Editor Jane Tunks Demel has been covering for me since then. (Thanks Jane!) My arm isn't completely recovered, but at least I can finally type without having to use two fingers, and I'm so happy my life is finally starting to feel somewhat normal again.
