What do you do with left over French bread? I like to make French toast Sunday morning for breakfast or brunch. What you need:
2 half inch thick slices French bread
1 large egg
1/4 cup half & half
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
*2 tablespoons crumbled bacon
2 tablespoons real maple syrup
1 tablespoon unsalted butter
In a small bowl whisk the egg, half & half, cinnamon and vanilla. Place the sliced bread in a shallow baking dish and pour the custard over it. Turn the bread to coat evenly. Allow the custard soaked bread to sit for 20-30 minutes. Heat cast iron griddle pan or skillet over medium heat. Melt butter and place bread on the pan to cook on each side until golden brown (about 2-3 minutes per side). Remove from the pan and lightly cover with foil. Place crumbled bacon in the pan and cook until warm and crisy (2 minutes). Spoon bacon over French Toast and top with real maple syrup.
*Tip: I buy the crumbled bacon from the salad bar at my grocery store. It's much less expensive than the packaged crumbled bacon and is a time saver.
