I just discovered how to make simple syrup to fancy up my summer cocktails. It's so easy that I am embarrassed I have not experimented before! Simple syrup is simply sugar dissolved in water. Yup. That's it. Combine equal parts sugar and water over medium heat, stir until the sugar is dissolved, and then let it cool. Homemade simple syrup can keep for a month or so in your refrigerator.
Once you have the basic technique down, try adding in something (anything!) to flavor your simple syrup like you are a professional mixologist about to make a twelve dollar cocktail.
Last week, I had an abundance of sage from my weekly CSA so I took 8 to 10 sage leaves and added them to 1/2 cup of sugar and 1/2 cup of water. While the simple syrup was cooling, I left the leaves in the pan to add as much flavor as possible. Once the syrup has completely cooled, remove the leaves and pour the simple syrup into a cute jar. My sage simple syrup came out a beautiful earthy green color.
