Have you ever tried Cauliflower "Rice?" It's finely grated cauliflower that's used in place of rice in recipes to make them grain-free or lower in carbs, and not only is it really delicious, but it's a great way to get some cruciferous cauliflower into your diet. I've been of fan of Cauliflower Rice since I first tried it a few years ago, and my fondness for lentils is well documented, so when I saw this recipe for Lentil and Cauliflower Rice Tacos from Fat Free Vegan Kitchen, it certainly sounded like a winner for Meatless Monday. Susan spices up the lentil-cauliflower mixture with all the smoky seasonings that make tacos so delicious, and serves it inside corn tortillas.
