I've finally narrowed it down to the Three Pie Finalists, and perhaps we'll have a pie-off at the dessert table. But I think this tart, rich, creamy darling is going to win:
Lemon Mascarpone Pie
This is way better than lemon meringue, with a bonus: no meringue to get fussed over during transport. Instead, spoon spiced whipped cream over it at the table. MMMmmmmmm.Step 1: Make Lemon Curd
Adapted from David Lebovitz
1/2 cup lemon juice (from lemons not bottles)
A few ribbons lemon zest (from same)
1/2 cup granulated sugar
2 egg yolks
Pinch of salt
6 T cold, unsalted butter cut into bits
Whisk everything but the butter together in a bowl and pour into a saucepan on low heat. Whisk in the butter cubes. When butter melts, keep whisking -- whisk, whisk, whisk -- and turn up heat to medium. After oh, seven minutes the curd will thicken up to a more solid character. You want it pretty thick -- it only sets a tad more after you refrigerate, and it should be pretty solid. When you're satisfied, strain it through a sieve into a bowl and refrigerate.Step 2: Make Crust
Parbake one 9-inch pie pan filled with your favorite crust recipe (or cheater's premade crust). Let cool entirely.Step 3: Make Filling
Beat together 1 cup of your lemon curd and 1 cup of mascarpone cheese until smooth and creamy. Fill cooled pie shell. Refrigerate.Step 4: Make Ginger-Cardamom Whipped Cream to Serve Alongside
Beat together 1 cup of heavy whipping cream, 1/4 confectioner's sugar, and a half teaspoon each of ground ginger and ground cardamom. Beat until soft peaks form.

Well, you knew I would be making my Lifesaving Thanksgiving Cranberry-Walnut Pie, right? Except: Since I've run out of walnuts, I'm going to try it with pecans tomorrow. I'm also going to whip up a Nutella Pie because I still have all the ingredients and hey, it's Nutella. And maybe, just maybe, I'll try out an apple pie if I get bored tomorrow. I've been scared of apple pie this whole month and intend to start up an Apple Pie Lab this weekend -- after Thanksgiving. So probably no apple pie on the holiday table.
