Jalapeno Havarti Stuffed Chicken Breast with Summer Berry Salad

Cheese is one of my favorite things on the planet. It can totally change a meal from blase to amazing! I wanted healthy crsipy chicken. As I was reaching in the refrigerator to grab the chicken breast, I saw my Havarti cheese just waiting to be devoured!


  • 2 chicken breast, rinse and pat dry
  • 8 thin slices of havarti cheese (4 for each breast)
  • 1 1/2 c. Gluten free organic bread crumbs
  • 2 eggs
  • Salt and Pepper to taste
For the Salad:
  • 1/2 c. Strawberries, sliced
  • 1 c. Raw organic spinach
  • 1 c. Organic Arugula
  • 2 leaves Organic Romaine lettuce
  • 1/4 c. Crumbled feta cheese
Make sure all your greens are washed and clean, and toss everything into a bowl, and sprinkle with crumbled feta cheese
  1. Preheat oven to 350
  2. Line baking sheet with parchment paper
  3. Pound out chicken breast with meat mallet, fairly thin
  4. Place cheese to one side and roll chicken breast in half, close with two toothpicks
  5. Salt and Pepper to taste
  6. Whisk the 2 eggs in a small bowl for egg wash
  7. Place bread crumbs in another small bowl
  8. Dip chicken in egg wash then bread crumbs (I also added a tiny bit garlic salt to the bread crumb mix, totally optional)
  9. Place on lined baking sheet and bake for 30 minutes on first side, flip and bake 20 minutes on the other
