If Loving Dessert Is Wrong, I Don't Wanna Be Right.

Please don't tell me not to love dessert. 

I've eaten my salads, watched my calories, cut way down on sodium and carbs, and I excercise daily (almost).  After finishing a skimpy little healthy dinner, my mouth is begging for more, for something sweet.  Not much, just a couple of yummy little bites will do it.  Now folks, if that's wrong, I honestly don't want to hear about it!

Here's one of my favorite, and easiest, recipes from The Muffin Tin Gourmet.  It makes my mouth water just looking at the photo.  Whip up a batch or two for yourself and let me know what you think!

Lemon Tartlets With Berry Cream
Yield:  24 Minis
Mini Sized Tins

2  Cups flour
1/2 Teaspoon salt
1  Cup shortening (Crisco)
2 - 3 Tablespoons cold water
2  Cups lemon curd
1  Cup whipped cream

1.  To make crust, mix the flour and salt well, then cut in the shortening until it        resembles small crumbs.  Sprinkle in the water and toss with a fork until the
dough pulls away from the sides of the bowl.  Roll onto a floured board as thin
as you can get it without tearing.  Use a glass to cut rounds, press into greased mini muffin cups and bake at 350 degrees until slightly golden. Cool completely.

2.  Fill with lemon curd and top with a dollop of berry cream.  Serve chilled, and eat them with a smile on your face!
