'Tis the season for watermelon, which means it's also the season for posts about watermelons, photos of adorable kids with faces covered in watermelon stickyness, and recipes using watermelon. Yippee for watermelon! Except this year, I was getting the feeling that there might be more watermelon posts than usual—and that watermelon cakes are super-duper hot this year. I thought it was my imagination, but then a co-worker posted a link to a watermelon cake, which led to discussions about watermelon and a ton of Pinterest board surfing.
Rather than sit on all of these great watermelon recipes, I figured I'd toss them into a post so you can add some really great recipes to your collection and maybe serve a dish or two that everyone raves about.
The watermelon "cake" is a clean-eating/paleo-friendly dessert that's actually a real WATERMELON. There are really so many versions that I had a hard time choosing one. Since I've been spending a lot of time thinking about Tiffany and her blog, I decided to lead with her version. It looks good to me. Here's another one from Bakepedia and you can surf them all day long on Pinterest if these aren't enough for you.
Watermelon Agua Fresca
My personal favorite way to enjoy watermelon is with a watermelon agua fresca. I like other flavors, but this one is my hands-down favorite. I could drink this all day long.
I'm no stranger to the watermelon and feta combo, but I absolutely adore the stacked version. Brilliant. I love these. I want them. Immediately.
Easiest dessert EVER. I use sugar, but I bet a lot of you will go for the Truvia version.
Watermelon Rind Pickles
I just realized I haven't had watermelon rind pickles in years. I must change this. Soon.
Watermelon Sweet Tea
I actually prefer iced tea without any sugar or extra flavors at all (I know, surprising since I come from the deep South), but I do enjoy a nice glass of sweet tea from time to time. Or sweet tea with fruit. I've never tried sweet tea with watermelon, but it sounds delicious, and I will absolutely be trying it this summer.
Chile-Lime Grilled Watermelon
I love grilled fruit of all kinds, and am wondering why I've never had grilled watermelon—probably because my kids generally ate all of the watermelon before it could make it to the darn grill. Now that the kids are older, we're going to have to give this a try.
Watermelon Sponge Cake
Wow. Every time I look at this I say, "WOW!" I love sponge cake. I love watermelon. I would adore this watermelon sponge.
Watermelon Feta Arugula Skewers
Again with the watermelon and feta—this time with arugula and balsamic reduction ... skewered. A perfect summer dish.
Watermelon Mojito Cupcakes
Everyone loves a nice cupcake and a nice mojito. Combining the two is a win-win, if you ask me.
Watermelon Ice Cones
I can picture my adorable two-year-old grandson enjoying this. We're going to have to try this when he comes to visit later this summer. Good thing he likes to share!
Watermelon Curry on Black Lentil Cakes
I think if I could only have one recipe on this entire list, I'd have to go with this one. Watermelon curry. Black lentil cakes. What's not to love about this?
This will be a nice change from the mango salsa we usually have.
Watermelon Mint Popsicles with Blueberries
I love the combo of watermelon, blueberry, and mint in these popsicles. Fancy-schmancy, right?
Watermelon Salad with Sriracha Vinaigrette
Sriracha makes everything better—even watermelon!
