Frozen Bananas + Peanut Butter + Cocoa = Healthy Reese's Inspired Ice Cream
ok.. you need some patience as well as a food processor or high powered blender to make this.
On my Banana Bread with Honey Butter post, I shared with you some other things you could do with Bananas. As promised, here is the recipe. Fake-out, Makeover, or reinveneted healthy whatever you want to call it, it's ice cream made with Bananas. You can put just about any flavor into this and you won't taste the banana. My kids love reeses peanut butter cups so my add-in's are: peanut butter & cocao powder.
If you want the ice cream sweeter, you could add dates, honey or agave. My kids said hersehy's syrup would be good (healthy, no - good, yes)
If you serve it right away, the texture will be a soft-serve ice cream, you can firm it back up in the freezer for a few minutes. It will turn into rock hard ice cream if you leave overnight. If this happens, just set at room temperature until it starts to soften and scoop away...

But the next picture taken 3 minutes later and we are just about there. At this point toss in your "add-ins"
and then turns into this....
This recipe happens to be vegan. Dairy free and HEALTHY!!!!
I have actually had people say "nevermind" when I say "vegan"- I don't think some people understand when you eat a fruit salad - you are eating a vegan dish. Vegan just means - NO animal products..
You probably have these ingredients on hand.. I used cocao powder which is an unrefined cocoa powder. You can use either one, the cocao is just healthier.
Just use frozen banana as the base and add whatever you want. If you add peaches, it will taste like peach ice cream.. If you add chocolate, chocolate ice cream.. get it?
Ideas for add-in's - chocolate chips - m&m's - nuts - candies - coconut - chocolate - berries or any other fruit
The only way it's going to taste like Banana is if you leave it plain, which I have done as well.
You can do SO MUCH MORE with Bananas that are turning ripe too fast.
FREEZE THEM.. First you MUST peel the banana before you freeze it or it's ridiculously hard to get the peel off. After you peel the banana, re-wrap it with parchment paper, wax paper, cling wrap, etc. Once you have the peeled bananas re-wrapped, store in the freezer in a ziplock bag.
You can make SOOOOO many great smoothies, shakes and desserts from frozen banana. Even HEALTHY, super fast vegan ice cream.The frozen banana gives an incredible creaminess to any recipe.
4-5 Frozen Banana's
2 tbsp cocoa powder
2 tbsp peanut butter
- Blend frozen bananas in a food processor or high powered blender until smooth. Appx 5-6 minutes (you may have to scrape down sides and blend again)
- Once smooth, add cocao powder & peanut butter and blend again until combined.
- Serve immediately for soft serve ice cream or place in freezer for a few minutes to firm up.
If you want the ice cream sweeter, you could add dates, honey or agave.
