It. is. so. hot....
Yikes, it is officially summer around here and very very hot for our nearly 8,000ft-above-sea-level town. The kids were begging for ice cream but the thought of loading up into a 100 degree car and driving into town felt daunting.
So I hunted through the freezer and came up with the golden ticket to beat the heat!
Guilt Free Fruit Sorbet:
1 c Full Fat Coconut Milk
2 Frozen Bananas
2 Frozen Peaches (sliced)
Place everything into your vitamin and give it a whirl for 1-2 minutes. No ice needed since the fruits were already frozen. The banana takes the tart from the peaches and no additional sweetener is needed.
