Stuffed Red Peppers are so much fun to make and are extremely quick and easy for a large family. I love Mexican food, so I always try to find a new way to incorperate a healthy Mexican dish. My family loved these individual dishes and felt contently full afterwards. I hope you do as well!
- 1 package ground turkey
- 1 package of low sodium chili mix
- 4 any color of peppers you want
- 1 cup brown rice
* avocado & cheese
Cut your peppers in half, scoop out the seeds, and place on your baking pan smooth side down. Cook your rice and brown your turkey separately. After they are fully cooked mix them together & add 2 tablespoons of chili mix (or to what you believe tastes best). Now place your mixture into each pepper and bake for 35 minutes. Add cheese on top and turn your stove to broil and broil for a minute. let cool then add your avocado! Enjoy!
