Grilling season has arrived in the northern hemisphere, and for quite a few years now I've been enamored with grilled mushrooms. Of course I love mushrooms no matter how you cook them, but the high heat of the grill intensifies the flavor of mushrooms and adds a slightly charred touch that really turns them into something special. When I spotted this Grilled Portobello Mushroom Burger at Simply Recipes, it struck me as being a perfect Meatless Monday dish. Elise has dressed hers up with the addition of sun-dried tomatoes, spinach, and some grilled onion, but I think the grilled portobellos would also taste wonderful on a bun with just some mayo.
