One of our favorite things to do on Sunday’s in the Summer is to grill and one of the most popular things on the menu is grilled Lamb Chops. This is so easy and takes no time at all to prep plus the clean up is even easier which is my kind of Sunday. Here’s the recipe.
1 rack of lamb cut into chops (6-8 chops)
4 garlic cloves, minced
salt and pepper
2 tsp fresh mint chopped
In a zip lock bag place your lamb chops, garlic, a few big splashes of olive oil and salt and pepper to your taste and the fresh mint. Zip up your bag and smush it all around until the ingredients are combined and coating the lamb chops. Place in the fridge for about 2-3 hours.
Once the lamb is done marinating, fire up the grill and you want to grill them until they are rare or medium rare. If you don’t like it that way and prefer it well done then that’s fine too. I just always found lamb to be better when it’s medium rare. Plate and serve with veggies or the Crash Hot Potatoes on the Pinterest remake page. These will go with just about any side in fact a nice salad would do too. Enjoy.
