One Sunday morning a few weeks ago, I was up early, it was a beautiful day and all I wanted to do was to sit outside on my deck with a cup of tea and a muffin. So, I made these muffins. They are quick, easy, grain-free, and they taste great. I kind of hoard healthy muffin recipes. Every time I see one that sounds good, I put it aside to try it out. I love to make up my own savory recipes but I’m really happy when I find a good baked goods recipe that comes out good without my having to think about it too much. Take a beautiful, fresh, crisp green apple…
Dice it up…
Stir together almond meal and coconut flour…
Add cinnamon and baking soda…
Coconut oil, honey and the diced apples…
Stir it all together and spoon the batter into a lined muffin tin…
Bake until they are golden brown…
Serve with a pat of grass-fed butter if you are feeling decadent. Enjoy!
Grain-Free Apple Cinnamon Muffins
(makes 8 muffins)

1 Granny Smith apple, peeled, cored, diced
1 cup almond flour
3 Tbs coconut flour
1/2 tsp baking soda
1 rounded Tbs cinnamon
pinch of sea salt
3 eggs, whisked
1/4 cup coconut oil, melted
2 Tbs raw honey, melted
Preheat oven to 350 degrees.
Line a muffin tin with cupcake liners.
In a large bowl, combine the almond flour, coconut flour, baking soda, cinnamon and salt. Stir in eggs, honey and coconut oil. Spoon batter into muffin cups. Bake until golden brown and cooked inside, about 25 to 30 minutes. Enjoy!
