For everyone in the Northern hemisphere, we're starting to have an abundance of zucchini and other summer squash, and this very tasty meatless vegetable stir-fry is one of my personal favorite ways to use these end-of-summer vegetables. I also have eggplant in my garden, but if you don't have eggplant (or if your tastebuds are eggplant-impaired) just use more zucchini or yellow squash.
