Today was a long day, and I just did not want to battle the grocery store. I decided it was time to fridge dive and see what I had available: leftover roasted chicken, half a container of mixed veggies from Trader Joe's, 1 head of lettuce, and a tomato. Time to put my scrounging skills to the test!
Those of you that know me, know that I am NOT the fan of iceberg lettuce because it is not as nutrient dense as some of its cousins, but it was left here after a cookout. So when all else fails, don't waste!
I put a little sesame oil in the pan and sauteed my veggies while I pulled the chicken off the bone and added it to the mix. The sesame oil gives the ingredients a nutty taste.
While that was browning, I washed and tore my lettuce and cut up the tomato. When I removed the ingredients from the pan, I tossed them with a little rice vinegar and shook on some sriracha. Life wouldn't be right without sriracha.
Mmmmm. Refrigerator diving success. This was a lettuce cup o' flavor. Ever have a fridge of hodge podge and come up with dinner?
