Fiesta Bean Salad with Cilantro Lime Dressing

Happy Friday! The weekend is so close I can taste it! Or maybe that's this amazing Fiesta Bean Salad. Either way, it's delicious! :) Better yet, combine the weekend and this salad and you are set! I had such a great response to this salad after I gave you guys a teaser, I decided to save the post I had planned for today and give the people what they want! Don't worry, the delicious dessert that was going to be today's post will be coming shortly ;) I made this salad for our Memorial Day fiesta and it was a huge hit. I love it because it is seriously tasty, but also super colorful and totally fresh. Perfect for an outdoor event and especially useful if you need to give your mouth a cool down after a bite of extra hot salsa! Check out all those colors? I mean, come on! How can it not be great?! Another plus is that is is something at a BBQ/fiesta that you don't have to feel one bit guilty for pigging out on. And trust me, you'll want to. But just think about all the good stuff you are getting in the fresh veggies and protein rich beans and load up and extra scoop or two. Just make sure your paper plate can handle it! What really takes this salad up a notch is the homemade cilantro lime dressing. Tart, fresh, creamy, and just a hint of spice. The perfect match for the beans and veggies. Plus, it looks so pretty! It's crucial to use the freshest veggies possible when making this salad, especially because you are using canned beans. And that means corn off the cob. It just tastes better. But it can be a little tricky to get. But don't worry! I have a great trick for you. Just take out a bundt pan and put the pointy end of the corn in the hole. Then cut dow the cob. The cob sticks and the bundt pan catches all the kernels-it's perfect! Don't you just love multi-use kitchen tools?! I usually make this salad a day in advance because I like to let the flavors meld together...well, that and making it early means more time to play during the fiesta! Make this salad and it will put a little fiesta in whatever you are up to! Enjoy! Fiesta Bean Salad with Cilantro Lime Dressing Author: Tara Ingredients 2 cans low sodium black beans 2 cans low sodium pinto beans 1 english cucumber, diced thin 4 ribs celery, sliced thin 1 red bell pepper, chopped 1 yellow bell pepper, chopped 1/2 small red onion, finely chopped 4 ears of corn, kernels removed 2 ripe avocados, chopped 1 bunch cilantro 1/2 cup greek yogurt 1 jalapeño juice of 3 limes teaspoon cumin teaspoon salt Instructions Drain and rinse beans Combine beans and copped vegetables In a blender, combine lime juice, greek yogurt, jalapeño cumin, cilantro (including the stems), and salt. Blend until smooth Pour dressing over beans and veggies Toss to coat Season again with salt and pepper
