When the seasons are changing it can be hard to decide what to eat, but this delicious Spicy Peanut Ginger Kale Salad from Healthy. Happy. Life. is a creative way to go from winter to spring. Kathy calls this a salad, but the spicy sauce is heated and slightly wilts the kale, and the flavorful sauce has peanut butter, definitely a year-round ingredient. I'd love this for a spring Meatless Monday lunch or dinner, no matter what the weather was doing that day.
