The kids have headed back to school, which makes me think of apples for the teacher. In my house, like many I would guess, apples are a reliable fruit to offer the kids. I know that if apples are offered, everyone will eat an apple or some slices.
While apples are delicious plain, I like to use apples (actually all foods) in different ways. Sure, I can make apple pie, applesauce, etc., but why not use it in an entree? With warm weather the other day, a salad seemed like the perfect dinner. Instead of making a tossed salad, I decided to make a chicken salad that had apples in it. I served it atop a bed of lettuce with homemade breadsticks on the side.
The good news about this meal is that it was a hit with the entire family! It was easy to make, especially as I had leftover cooked chicken available. I had the salad chilling in the refrigerator in about 10 minutes.
With local orchards bursting with apples, I am looking forward to the next warm day, so we can have this salad again before the cold weather arrives for good.
