Too hot to turn on the oven but crave granola? You are gonna love this recipe.
Oats are a staple food to have around the house. In this recipe I toast them, which really brings out their flavor. In the past I’ve baked oats and the flavor is good but it takes longer. This recipe is perfect if you’re pressed for time, or your favorite guy requests that you not bake if it’s over 85 degrees fahrenheit. I know he’s right. Why heat up the house? I love you sweetie!
Cooking them on the stovetop works great.
You have to keep a close eye on the oats and stir frequently when browning because I burned my first batch. Keep them moving in the pan or they will brown in spots.
I ran over to get the shoot set up for the end product and sure enough I burned the oats. It happens. I did not exercise mise en place.
As for the rest of the ingredients I used unsalted sunflower seeds, unsweetened shredded coconut, and clover honey which is mild and has a slight floral flavor.
I served the granola with fresh cut honeydew melon, cantaloupe, and watermelon. It made for a colorful palate and creamy plain yogurt for a smooth texture.
The glasses I used for this shoot I’ve had for many years. I bought them at a thrift store for our wedding reception we had at home for friends and family. It was hosted by good friends of ours. We had several hours between the ceremony and reception downtown. My friend offered to host a get together at our house. She made wonderful appetizers and her husband served drinks. They even cleaned up everything. Her ability to host awesome parties and prepare beautiful food is why I strive to do the same. She motivates me to give it my all. Makes approximately 2 1/2 cups
- 1 cup rolled oats
- 5 tablespoons sunflower seeds
- 3 tablespoons shredded coconut unsweetened
- 3 tablespoons honey
- Heat rolled oats 5 or so minutes on low-medium heat stirring frequently. Pull the oats off the heat when they are slightly lighter than you want them to be because they continue to cook. This is called carry over cooking.
- Remove from heat. Add sunflower seeds, coconut, and honey. Stir to combine and let cool a few minutes.
