I will confess, I didn’t feel bad for serving chocolate to my kids for breakfast.
Maybe because it’s so darn yummy or maybe because the chocolate was served with lots of protein. Either way, I was game and so were the kids.
The truth is, school is next week and I want to spoil the kids rotten before they leave me. (Sad mama here. Kindergarten is breaking my heart!) By giving them protein bars for breakfast not only do they think I’m the best mom to start off their day with a sweet, but I know I’m starting their day with lots of protein.
I’ve been busy in the kitchen making one of my favorite things, healthy snacks. I like to have them on hand so after school, the kids can open the fridge and choose something healthy. Heck, I like to choose something healthy myself!
6:00 am wake up call: Easy Protein Bars.
This recipe was a spin off of my balls that I make during the winter-time. We love eating balls and if you want, you can make these into balls too. After everything is combined, roll them into balls and freeze. You will have smaller bites and they are easy to consume. <— That’s also a warning. wink. wink.
I would add more sweet chocolate morsels to get some in every bite if forming into balls. I would also forgo drizzling chocolate on the balls since it’s a harder shape to do so and they stick together.
Of course with bars, you don’t have the drizzling chocolate problem. Just push down the mixture…
Then drizzle lots of chocolate on top.
And of course, add all the toppings you like. Coconut, pumpkin seeds, nuts…you name it. My not-so-little kindergartener likes his with no toppings, just lots of chocolate.
Now Ms. Three, loves hers with lots of coconut. I like both.
Needless-to-say they were all gone by the end of the day and everyone had the toppings they loved.
