Easy Crock Pot Chicken Breast with Salsa
4 boneless, skinless chicken breasts
1 jar of your favorite chunky or picante style salsa (heat level your choice)
2 cups of water
3/4 C chopped onion (white, yellow, etc.)
1 C white rice
Shredded Cheddar, pepper jack, cheese of choice
A crock pot
Place chicken breasts in crockpot; pour one jar of salsa over them and add 2 cups of water and onion; turn crockpot to high until it slightly bubbles, then turn down to low. Let cook for at least 4-8 hours, depending.
When chicken is done (it will be super tender/shred easily); follow the directions on rice package to make as much rice as you need for your meal.
When rice is done, top with chicken mixture. Sprinkle shredded cheese over the top. You can also add more minced onion, olives, avocado, etc. This is a super easy crock pot recipe and there are limitless possibilities when it comes to serving style.
You can also opt-out of the rice and place the chicken mixture into tortillas!
