Store bought broccoli pancakes make this meal done in under 20 minutes. Just what I need some days.
I like the way this meal comes together. Quick and easy is on the agenda this week. You won’t be sweating in the kitchen putting this together.
I love the creamy texture avocado lends to a meal. I have really tried incorporating avocado into my every other day life. One of my favorite ways to eat it is sprinkled with sriracha sauce. Yummm.
If you make this just for you, it averages out to about 450 calories depending on the type of dressing you use.
OK you got me. I took a photo of two plates but I ate the whole thing. I had a pretty long workout today.
Serves 1 large or 2 small salads
- 2 Dr. Praeger’s broccoli pancakes
- 1/2 avocado
- 1 slice gouda cheese
- 2 cups fresh Spring Salad
- 1 cup shredded carrots
- dressing of your choice
- Heat broccoli pancakes in 425 degree fahrenheit oven for 12-15 minutes. Add 1/2 a slice of cheese to each pancake. Heat till melted, about 3-5 minutes.
- Place Spring salad on a plate and sprinkle with shredded carrots. Add sliced avocado and place broccoli pancakes on top of salad. Serve with dressing of choice.
