Tomorrow Jeff and I are traveling to his parent's house to celebrate Easter with his side of the family. Since we will be in Florida next week (yippeee!) and his siblings are also traveling Easter weekend, we decided to all celebrate the weekend before. I was in charge of dessert since my brother-in-laws are amazing chefs and always take care of the meal for us! I thought my nieces and nephew would love these bird's nest cookies (and probably all of us adults too)! So, I am sharing them with you in hopes that you will have time to go buy the ingredients before Easter next weekend.

- 12 oz. package chow mein noodles
- 12 oz. package butterscotch chips
- Egg shaped candies (we used Hershey but peanut M & Ms work also)
-Begin by melting the butterscotch chips in a microwave safe bowl. Heat for 30 seconds, then stir and repeat until candy is melted completely and smooth. -Line a baking sheet with parchment paper. -Add the noddles to the bowl of melted candy and mix (crush them up a bit, but not too much). Use a large spoon or a 1/4 measuring cup to measure out the cookies and place on parchment paper. Place 3 of the candies (eggs) in the center. *Note: If the melted candy starts to harden while making the cookies, simply place back in the microwave for 10 seconds. Also, to help the candy eggs stick, dip the bottom in the melted chocolate before placing onto the cookie. -Allow about 5-10 minutes to dry and harden then enjoy :)

I'm going to make these again for Easter with my side of the family-my little cousins will love them! You could also probably use peanut butter chips instead of butterscotch. However, my nephew is allergic to peanuts so we avoided the nuts (and if you are taking these to a party with any kids you may want to also since you never know who might be allergic).
Easter is my favorite holiday (yes, I enjoy Easter even more than Christmas). And although my favorite part of Easter is the sound of trumpets playing at church, these adorable bird's nest cookies have added to my love of this holiday!
I have off of work today so I am able to enjoy the day with Jeff (who always has off on Fridays). We went on a 5.5ish mile run, made these cookies and are now heading to the park with Ollie on this beautiful day. Need to fit in some last minute shopping and packing sometime today as well. Also, just wanted to finally tell everyone (since we have had keep it to ourselves for 15 weeks) that my sister is pregnant! I cannot wait to be Aunt Cait to the little peanut inside her belly.
