YAY Easter season!! It’s finally here! That pure and innocent holiday that screams church, grandparents, pastels & peeps..YAWN! Don’t get me wrong, I love the family dinner, the ham and all the hyped up kiddos. But let’s face it, this holiday could use a little kick in the pants to get our bunny party on! I mean we party it up at Christmas, right?! I even had some “Drunken Gingerbread Men Cupcakes” to prove it! :)
So I say, let’s take Easter and wake it up a little! Why not? If grammy has a problem with it, just give her a couple of these Rum soaked cupcakes, and she won’t care for long..lol!
These little guys look like they’re having a hoppin’ good time! Even though it appears that they’ve stumbled and cracked some eggs, poor things..lol! :)
What better way to get the festivities started than with some cupcakes dripping in Rum? Just look at these tipsy little Peeps trying so hard to blend in with the angelic theme of the Easter Holiday table! They’re so moist and tasty with a Robin Egg surprise in the center and a totally sassy kick from the cake soaked Rum! :)
Remember to make some rum free little guys..for the kiddos!
What you’ll need:
1 box of Strawberry Cake Mix
Peeps..one per cupcake
1 Cup of Rum..to replace the water in the cake mix! (I Used Vanilla Rum and Cran-Cherry Rum)
1 container of white frosting
Malted Robin Eggs..1 for each cupcake, and a handfull of crushed crumbs for the topping
Prepare the cake batter according to the instructions, but replace the water with the Rum!
Fill each cupcake liner 3/4 the way full and drop in one Robin Egg
Crush up some Robin Eggs for the topping!
Bake at 350 for about 12 minutes or until they’re firm
Let them cool
Frost them and sprinkle some Robin Egg crumbles on top
Place the Peeps on top of the frosting in drunken positions
