Last week, I reminded everyone that summer is not over, and this Fresh Corn, Tomato, Avocado, and Basil Salad from David Lebovitz is a gorgeous reminder of why you need to be using ingredients like fresh ripe tomatoes, raw summer corn, and fresh basil before it's too late.
The salad looks perfect to me with just the simple summer produce David has used, and it's vegan if you follow the recipe as he's written it. To turn it into a more substantial Meatless Monday main dish, there are suggestions for other vegetables and/or cheeses you could add, including halloumi, one of my very favorite things to add to any salad. (And if you don't care whether it's a meatless salad, David has some suggestions for meats to add to the salad as well.)
Make this salad in whatever way suits your taste buds and enjoy all these last-days-of-summer flavors! And don't wait too long because in about a month all the amazing summer vegetables and herbs will be gone for another year.
