I hope you like the combination of curry and eggs as much as I do. Yes, curry
is frequently used in our home, not only because it tastes good, but it also contains so many powerful nutrients that it is bound to boost your immune system.
A simple way to prepare a quick sandwich like the one I just mentioned in the title of this post is as follows:
3 hard-boiled eggs, diced
2-3 stalks of fresh celery
½ to 1 tbsp. curry (depending on your “heat” preference)
a dash of Kosher salt and pepper
*Instead of using mayonnaise, I used 1 tbsp. of Spectrum naturals Light Canola Mayo and 1 tbsp. of lowfat Greek yogurt.
The bread I used was whole wheat, but you can also use Rye or Pumpernickel. You can vary this recipe by being “edgy” and adding chopped grapes or raisins or even diced apple slices. Whatever you decide to do though, make sure to include some highly nutritious ingredients like those mentioned. Keeping your immune system as strong as possible will only minimize your chances of getting some nasty virus, after all, don’t you want to be feeling great all day?
*Also added on the plate are a few spinach leaves with red peppers and pepitas and a drizzle of olive oil.
