Crockpot Chicken Vegetable Soup

Crockpot Chicken Vegetable Soup
It is so humid here, walking outside is like stepping into a sauna and that makes me want to avoid my kitchen...well, at least my oven. That's why I love my crockpot!

Ingredients:

  • 2 Chicken breast
  • 3 c. Organic chicken stock
  • 1 1/2 c. White beans (we used Great Northern)
  • 1 Zucchini, sliced
  • 2 Carrots, or 12 baby carrots, sliced (I prefer the baby carrots)
  • 3 Stalks celery, sliced
  • 1/2 med. white onion
  • 1/2 tspn. Oregono
  • 1/2 tspn. Thyme
  • 1/4 tspn. Sage
  • 1 tspn. Sea salt
  • 1 tspn. Fresh gound pepper
  • 2 bay leaves
 
Directions:
  1. Place all ingredients in crockpot 
  2. Set crockpot to med for 5-6 hours, or high for 4-5 hours
  3. Once chicken is done, shred using two fork method
 
Serve with a spring salad for a complete dinner
