I hate to even call this a recipe because it's just so darn easy. Simple and absolutely delicious! This "recipe" is your perfect break for the coming work week after all of the Super Bowl food prep that you probably did today. It's also the perfect dish for single gals, married couples, or small families because it's the gift that keeps on giving. I'll explain that later.
Three ingredients and almost zero work? Yes please!
1. 1 packet of taco seasoning
2. 6 boneless, skinless chicken breasts
3. 16 oz. jar of your favorite Salsa
Put your magical three ingredients into your crock-pot and mix. Cook on low for 6 hours. You will know it's ready when you can simply stir the chicken with a fork and it shreds beautifully.
You will fall in love with this chicken. It is incredibly moist and the spices are just right! I use half of the shredded chicken for tacos on night number one. No chicken the second night for the sake of "mixing things up". Night number three...
Chicken Tortilla Soup
2 cups shredded chicken
32 oz. chicken broth
1 box spanish rice
1 can of corn (drained)
3/4 cup chopped cilantro
1 lime (squeezed)
1 can diced tomatoes (reg size)
1 can diced tomatoes w/ chiles
1/2 large yellow onion (diced)
1 can black beans
3 Table spoons tomato paste
2 teaspoons cumin
2 teaspoons chile powder
2 teaspoons garlic powder
Cook the rice per the box instructions.
Add all of the ingredients to your pot and simmer for 30 minutes.
Best tortilla soup of my life!
I always garnish it with some tortilla strips, shredded cheese, and a few avocado slices.
I told you that this chicken was the gift that keeps on giving! I despise leftovers, especially boring ones so I truly appreciate it when I can reuse what I cook in another recipe.
My husband devours both the shredded chicken tacos and the tortilla soup. He even refuses to let me put any of the chicken aside to freeze for future recipes. Girls, trust me on this one.
