Cranberry Relish

I had my Christmas dinner today, and thought that I would take a crack at Cranberry Relish. My dad used to make this on Thanksgiving and Christmas, and I always loved it. This is a very simple recipe and a great way to introduce someone to cranberries.  Here is what you need.

12 oz of Cranberries, fresh is best.
1 cup sugar
2 cups water
1 tablespoon lemon and orange zest.

Bring water to a boil in a small pot. Add your sugar while the water is boiling. Make sure your cranberries are cleaned off, and any bad ones are taken out.  Dump the cranberries into the pot. You will notice that they will pop very quickly. Add your lemon and orange zest into the boiling water. Let the mixture boil for about three minutes. Reduce the heat and let simmer for 10 minutes, and mash cranberries. If the mixture is to soupy for your liking, simply let the relish simmer and reduce itself until consistency that you like. Also if the relish is a little too tart for you, you can add sugar until the relish is palatable for your liking.
Once your relish is done, chill for about 30 minutes or serve hot, your preference.

I hope you enjoyed. This relish is so good, and so easy to make. There is a huge difference between the taste of homemade cranberry relish, and the stuff in a can.
