Sorry I haven't posted for a couple days, been a little busy. So here is what I was craving today. I don't know about you but I love bacon and to me anything with bacon in it is better. So please don't be afraid to try these cookies, yes I said cookies with bacon. Trust me....please, these are so darn good. Give them a try!
Chocolate Chip Bacon CookiesIngredients
- 2 1/2 cup All-purpose Flour
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Cinnamon
- Pinch of Chili Powder(you can omit this if you want)
- 1/2 teaspoon Salt
- 1 Stick(1/2 cup) Butter, Room Temperature
- 4 Tablespoons Reserved Bacon Drippings
- 1 cup White Sugar
- 1 cup Brown Sugar
- 2 Eggs
- 2 teaspoons Vanilla Extract
- 2/3 cup Semisweet Chocolate Chips
- 8 strips maple bacon, cooked and crumbled
Preheat the oven to 350ºF and line a baking sheet (or 2) with parchment paper.
In a large mixing bowl, combine the flour, baking soda, baking powder, cinnamon, chile powder and salt.
Beat the butter and reserved bacon fat drippings until smooth, about 1 minute. Add the white and brown sugar and beat until creamy, about 3-4 minutes. Then add the egg and vanilla and beat until fluffy.
Add the flour. Mix until just combined, then stir in the chocolate chips and crispy bacon.
Roll into TBS size balls and place on cookie sheet about 2 inches apart from each other. Flatten the cookie balls slightly with your fingers and then bake for 12-14 minutes until golden brown. Cool slightly before removing from the cookie sheet.
