It's another installment in my series about Cooking With Fresh Herbs, and this time I'm focusing on dill, something I'm rediscovering in my own garden after forgetting to grow it two years in a row! If your only exposure to dill has been in pickles, now's the perfect time to try it because fresh dill goes well with so many foods that are appealing in hot weather.
Dill is relatively easy to grow, although it grows best where there's plenty of sun. Lots of nurseries will sell dill plants, but it's also easy to start from seeds, and if you let your dill plant go to seed at the end of the summer, the plant will very cooperatively drop the seeds and grow new dill for you in that spot the following year. Wikipedia points out that the dill plant is used three ways in cooking, with the dried leaves being called dill weed, and the seeds called dill seed. Recipes in this collection are for using the thin, delicate leaves which we call fresh dill.
When using fresh dill, discard the thicker parts of the stems, breaking or snipping off the thinner stems with leaves attached. Each spot where you snip some dill from the plant will form two branches, so like most herbs, using the dill often will produce a bushier plant. Now here are some ideas for using dill with fish or seafood, vegetables, soups, baking, and some dill combinations you may have never heard of before.
