I know I know, you probably feel like I have been teasing you with this one. Bison tacos are a favorite in my house. If you missed my post last week on the health benefits to bison check it out here. If you prefer actual tacos, then just add some tortillas to this recipe. The hubs always prefers to eat dinner out of bowls because he says it’s “less mess and less clean up”
1lb ground bison
1 red bell pepper chopped
1 yellow bell pepper chopped
1 small onion chopped
1 can of black beans rinsed and drained
3 tablespoons of taco seasoning. I use this recipe from the Gracious Pantry.
1/4 cup of stock (whatever you have on hand is fine)
Dice peppers and onions

So, I make either brown rice or quinoa as my base. Then add your taco mix.
Toppings are endless! I like to add greek yogurt (tastes just like sour cream,) cilantro, avocado, lettuce and some nutritional yeast. My daughter and husband like to top theirs with cheese! The options are endless
