Cinnamon Bun Mini Donuts
These donuts were my first attempt at using my new Bella Mini Donut maker. I picked a recipe from Averie Cooks for 'Baked Cinnamon Bun Dunuts w/ Vanilla Cream Cheese Glaze'. Please check out her post for the recipe and baking instructions for these and so many more yummy treats!
I made just a tiny adjustment in using unsweetened Almond milk with just a drop of apple cider vinager in place of the buttermilk. And I doubled the cinnamon to 1 tsp. The rest of the recipe is the same for the donuts. The were beyond delicious. Spicy, cakey, mildly sweet. I also changed the glaze to be more dairy free. The glaze I used here was 3 Tbs. of Cookie Dough Butter (from Trader Joe's) softened, mixed with 1 dropper full of Vanilla Stevia and 1 Tbs. of melted Coconut Oil for the glaze. I also sprinkled them with Cinnamon Sugar after they had been dipped in the glaze.
This recipe made 18 mini donuts, just right to be eaten up in a few days. I had to stay right with it though and cut the cooking time based on lifting the lid and checking how they were doing. The 3 batches I did for these each took less than 2 minutes to cook. Averie has suggested in her recipe not to overbake so I did cut off the cooker as soon as they looked cooked on the edges. They turned out just perfect thanks to a wonderful recipe just tweeked ever so slightly to be non dairy.
