his weekend my daughter celebrated her birthday with family, friends, loads of stomach clutching laughs and SUGAR in cake and cupcake form!

This year she wanted an 8 layer chocolate cake, with 4 layers of cake and 4 layers of thick frosting…
So that’s what I set out to do…

Held together with frosting and this chocolate surround…

Cake after a couple hours in the fridge to let the surround cool and harden, and before I wrote on it…

CAKE
  1. 2 sticks butter
    campaignIcon Recipes
  2. 2 cups dark brown sugar
  3. 4 teaspoons vanilla
  4. 1/2 cup cocoa powder

  5. 8 ounces good quality chocolate melted - I used Ghirardelli semi sweet chips
  6. 2 teaspoons baking powder
  7. 2 teaspoons baking soda
  8. 21/4 cups all purpose flour
  9. 1 teaspoon instant coffee
  10. 21/4 cups buttermilk at room temperature
FROSTING
  1. 3/4 pkg powdered sugar
  2. 2 sticks butter
  3. About 8 tablespoons heavy cream
  4. 4 ounces melted chocolate
  5. SURROUND
  6. Good quality chocolate

Instructions
  1. Preheat oven to 350 degrees
  2. Beat the butter and sugar till creamy
  3. Add the eggs mix well and then add the flour, the vanilla, the coffee, the baking powder and baking soda
  4. Melt the chocolate and add its well as the cocoa to the mix
  5. Beat everything well
  6. Divide mix between 4 parchment lined baking trays and bake for 22-25 minutes
  7. Make the frosting by beating all the ingredients well and slathering on
  8. Make the surround by melting chocolate and drizzling it onto parchment paper and letting it cool - just before it cooled all the way, I placed it around the frosted cake and let it harden more in the fridge.
