I’ve been trying to come up with a few new make-ahead healthy desserts for Memorial Day weekend. This is the first one that I’m really happy with. It is so good! And, it’s pretty easy to make. It can be made several days beforehand — just keep it in the freezer until you are ready to eat it.
The basis of this sweet treat is nuts and bananas. I used a mixture of walnuts and pecans. Lately, in my acupuncture and herbs practice I’ve been seeing a lot of people who are suffering with constipation. One of the foods I always recommend to these people is walnuts. Walnuts are actually considered a Chinese herb (He Tao Ren). They are great when your digestive system is sluggish and they are also good for people with chronic coughs and those who suffer with annoyingly frequent urination.
Bananas also help with slow digestion and they are also great for dry skin, dry coughs and anemia. And, bananas and walnuts really do taste great together.
The sweetener I chose to use in this recipe is Lucuma Powder. Lucuma is a South American fruit. When it’s dehydrated, it produces this powder. It’s a great sweetener because it’s high in minerals, vitamins, antioxidants and fiber. Lucuma has been used for hundreds of years to reduce inflammation and for it’s anti-aging capabilities. It also makes desserts taste really good!
I used a mixture of walnuts and pecans…
Along with a few ripe bananas…
Put these in the processor with some coconut oil, cinnamon, salt and lucuma (or a sweetener of your choice)…
Whiz it up until its’ smooth…
Spoon it into lined mini muffin tins or a silicon candy tray…
Next, pop it in the refrigerator for a few hours and let it harden. Then, melt dark chocolate with a little coconut oil…
And dip each piece of fudge into the chocolate…
Set them on a parchment paper lined tray and put them back in the freezer until the chocolate is completely hardened…
When they have hardened, feel free to move them to a different container, separating the layers with parchment. Enjoy!
Chocolate Banana Fudge
(makes 24 pieces)
2 cups raw organic walnuts
1 cup raw organic pecans
2 ripe bananas, peeled and cut into pieces
2-1/2 Tbs coconut oil plus 2 more Tbs for the melted chocolate mixture
2-1/2 tsp cinnamon
1/4 tsp salt
3 tsp lucuma powder (or sweetener of your choice)
15 oz dark chocolate
Put the walnuts, pecans, bananas, 2-1/2 Tbs of coconut oil, cinnamon, salt and lucuma in a food processor. Process until smooth. Spoon the mixture into a silicon candy tray or lined mini-muffin pans. Put pan in freezer for a few hours until fudge is hard.
In a double boiler, melt the chocolate with 2 Tbs of coconut oil. Using a fork, dip each piece of fudge into the chocolate mixture until it is completely covered. Place each piece onto a tray lined with parchment paper, making sure they are not touching each other. Put the tray, uncovered, into the freezer. Keep them in the freezer until you want to eat them (they melt if you keep them out). Enjoy!
