This snack-cake not only has carrots and cinnamon, but it is filled with superfoods. I call in a snack cake because it’s not as rich as traditional cake, but it’s not dry like a scone. One square of this is really a perfect snack. So, here we have a healthy, delicious, and oh-so-easy-to-make snack cake. Oh, and by the way, it’s grain-free and sugar free…
In Chinese medicine, carrots are known to help strengthen the organs in your body. They also are good for the eyes (this is their claim to fame) and they promote healthy digestion. Many moons ago, people used to make carrot tea to ward off measles and to prevent cancer. Today, this veg is more well known for it’s help with vision problems.
I’ve added goji berries to this cake. Goji berries are a Chinese herb (Gou Qi Zi). These delicious jewels are great for your blood. They also are prescribed for poor or blurry vision. They are considered an anti-diabetic herb and are really great for some types of stomach pain, impotence and back problems. However, they are not good for some pregnant women, so just be aware.
Chia seeds and hemp hearts are also blended into this cake. These are two superfoods that are good for everyone. Any time you can add these seeds to your foods, do so. Here, they give the cake a great texture and they just kick the health benefits up to an even higher level.
Shred a few carrots, or take the easy way out and buy a bag of organic shredded carrots…
Stir in some almond butter (either homemade or store-bought)…
And melted raw honey…
Add a little coconut flour, baking powder and salt…
With some cinnamon…
And fold in your goji berries…
Pour the batter into a greased pan…
And bake until its beautifully browned…
Cut it into squares and enjoy!
Carrot Cinnamon Snack Cake With Goji Berries
1-1/2 cups shredded carrots
3/4 cup almond butter
3 Tbs raw honey, melted
2 Tbs coconut flour
1 Tbs chia seeds
1 Tbs hemp hearts
1 Tbs cinnamon
1/2 tsp baking powder
scant 1/4 tsp salt
1/2 cup goji berries
1 Tbs coconut oil for greasing the pan
Preheat oven to 350 degrees. Grease an 8 x 8-inch pan with coconut oil.
Combine all ingredients, except the coconut oil, in a large bowl. Pour the batter into the prepared pan. Bake about 25 minutes, or until a knife inserted in the center comes out clean and the top is nicely browned. Let cool in the pan, then slice into squares and enjoy!
