In Utah, we're having perfect Indian Summer weather. There's just the tiniest nip of fall in the air, but gardens are still producing plenty of tasty late-summer ingredients. My friend Dara from Cookin' Canuck took advantage of tomatoes and basil from her garden to create an amazing-sounding Caprese Quesadilla with Tomatoes, Mozzarella, and Basil Mayonnaise. Then she enjoyed them at an outdoor lunch with her husband for a perfect fall birthday celebration.
