Bumpy Road Calls for Bumpy Cake

You may have noticed that over the past weeks, well since April, I haven't been as talkative as of late. Sorry for that. I've been doing a million and one things all at the same time. I'm finding my time is stretched pretty thin these days. So a brief recap of what is going on over here in my little corner of the world. Last month I had a blast at Coachella. Oh, and I've already purchased tickets for 2013 so... YAY!

I've been trying to train for my 10k, which by the way is Sunday (gulp). Unfortunately for me, I've run into a few bumps in the road, so to speak. It would seem when you have GERD it can cause other major digestion issues (and that's putting it politely). Let's just say that most evenings before I retire to bed, I look as if I am four months pregnant.  Thanks to the bloat, my wife now calls me 'Buddha Belly'. So long story short, I've had to change my GERD medications twice now and it's probably time to finally get an upper endoscopy to figure out why I even have GERD. Oh, and most definitely to get rid of the major bloat. So not attractive!

A few of you had suggested I might have another food sensitivity, which is very likely. The doctor is more concerned about a possible hernia, leaky gut, etc. I really hope whatever it is that it isn't something major or life altering. I've got to much to do to slow down now.

So needless to say, because of the health issues I haven't trained as much or as often as I should have. Does that mean I'm not going to do the race? Heck no! I'm doing it, but I think I'll just run the 5k instead. That way I can spare myself the humiliation of a crappy race time, and not to mention the discomfort from my Buddha belly.

Besides the race this weekend, I have plans to work on a cupcake recipe. I've been trying to figure out how to recreate a gluten-free and dairy-free version of Bumpy Cake. I know, I can hear you from here...a bumpy what?

It's a chocolate cake recipe that is a favorite of Michiganders. It was originally created by Sanders Candys who is known far and wide for their hot fudge. This moist, dark chocolate cake has a sweet layer of buttercream topped with a fudgy, almost caramelly chocolate frosting. It's ideal for chocolate lovers, and though it has three separate components that require freezer cooling to obtain picture perfect results, it's well worth the effort. If you grew up in the Detroit area, like yours truly, you loved Sander's Chocolate Bumpy Cake.

Alas, no one has published a gluten-free recipe for Bumpy Cake. I did learn that there is a bakery in Plymouth, MI, called Rumi's Passion Gluten Free Bakery that actually makes gluten-free bumpy cakes. I'm hoping they can help a girl out.

Also on my to do list...eating the rest of my Rudi's Gluten-Free Bakery Tortilla samples (review to come). Oh you heard right! Someone has finally made gluten-free tortillas. Chicken enchiladas here I come!!

There is so much more I'd like to share with you. Most of what is transpiring in my life right now is not really a secret to most. More like a work in progress, so I'll leave it at that for now. Hope you all have a great weekend!
