Blue Cornbread with Green Chili
This bread machine recipe was easy to throw together. I didn’t have regular cornmeal, but I had blue cornmeal that came by UPS last week with my Hatch Chili order. We’ll see what blue cornbread looks like in a few hours.
2 teaspoons active dry yeast
1/2 cup water
1 tablespoon butter
2 cups bread flour (plus more if you need it)
1/2 cup blue cornmeal (Atole)
1 tablespoon white sugar
1 teaspoon salt
Pour 3/4 cup of Copes dried roasted corn into cup and add hot water to cover. stir and let sit while you add the rest of the ingredients to the pan. when water is absorbed, add corn to bread pan with the other ingredients.
Press Start for Basic bread.
Watch the mixing to make sure your dough isn’t too wet or dry, adding extra flour or water if needed. The original recipe called for a cup and a half of flour, but I had to add another half cup to get the dough to correct consistency. Frozen corn has a high water content also, so just sprinkle flour as needed.
When your machine beeps the first time, add the chopped chili.
This is a Pennsylvania Dutch(ified) version of cornbread!
