The Best Apple Pie: Tried and True Recipe

I believe that the best home made food is the simplest to make.   Here is my recipe for apple pie: simple and delicious.

For the crust

  • 1 stick of cold butter, salted
  • 2 and 1/2 cups flour
  • 2 teaspoons sugar
  • 1/4 cup water

Combine the flour and sugar in a large bowl. Cut the stick of butter into little pieces, and put in flour mixture.  Cut the butter in the flour mixture until fully incorporated.  The mixture will resemble tiny bread crumbs.  Instead of using a pastry cutter, you can also use your hands.  I roll each piece of butter in between my finger tips with the flour, until it crumbles away.  Try not to take too long to do this, as the butter will get warm and you will not be able to work with it as well.  Once the flour mixture has reached uniform consistency, add a dash of water and stir with your hands.  Keep adding more of the water, a splash at a time.  Yes, it only takes this little of water to bring together the dough, because the butter will help to bring it together as well.  Once you have formed the mixture into a ball shape, spread onto counter and roll into two circular shapes.  These are your pie crusts! Layer one pie crust into your pie dish.

For the Filling

  • 8 Granny Smith or Gala apples
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup sugar
  • 1/3 cup flour
  • Juice from one lemon

Peel each apple, and chop into 1/2 in thick slices. Toss with the rest of the ingredients and let sit for about half an hour.  Pour the filling mixture into your pie crust, and top with the other crust.

Now for the fun part!  You can decorate your pie crust with cut outs, or slits, made with a knife on the top crust.  Make sure that you at least make a couple slits or x’s on top, so that the steam may escape from within the pie when it is baking.

Bake for approximately 30-4o minutes, in a 375 degree oven.
