Barley Risotto with Squash & Gruyere from Eats Well with Others

I'm one of those people who loves butternut squash, so as soon as it's cooler weather anything with this creamy variety of winter squash appeals to me. Besides the butternut love, this tasty-looking risotto from Eats Well with Others has barley and kale, two more of my favorite comfort food ingredients. If you haven't had Gruyere, it's a particularly flavorful cheese that I'm sure tops off this Meatless Monday dish with a lovely nutty flavor!
