I'm about to reveal something about myself that may completely discredit me as a baker.
That's right. It's confession time. And this one's a doozy.
Whew! Here goes: I only recently made Rice Krispie Treats for the first time.
I KNOW! What is wrong with me???
Kids can make Rice Krispie Treats. I've seen the tv commercials. I just never did! I didn't really grow up baking. My mom was never really too keen on the idea of a messy kid trailing melted butter, gooey marshmallow, and dusty cereal all over her immaculate kitchen.
Huh. Weird, right?
So, by the time I got into the world of pastry, my palette was already more refined, and I was interested in more vibrantly flavored desserts with complexity.
Fast forward a couple of decades, when I got a wild hair to make RKT's for my kiddos.
O. M. G.! I could NOT believe how awesome they were. People. I'm sure I'm probably preaching to the choir here, but when you make your own Treats, with REAL butter, oh! They are so outta this world delish.
This version, I like to think, bridges the gap beautifully between a well-loved, nostalgic childhood treat to a more adult indulgence.
Buttery brown sugar and bananas, along with a tipple of rum, come together with the familiar gooey marshmallow and crispy rice cereal.
The sticky mixture is pressed into a greased baking dish (grease your hands too!), allowed to cool, and cut into thick bars.
Salted caramel sauce and banana chips are the crowning touch!
