She is a genius food blogger and I lurve the fact that she has a cookbook coming out in December.
She made some paleo Chunky Monkey Bon Bons. And I wanted to eat them. But, my freezer sucks. It has drawers, which in hindsight aren't as awesome as everyone thinks they are. When you want to put a tray of something in there well, you can't. Cause there are drawers, not shelves. Drawers move and are full of food that won't fit in other drawers. And don't ask me why I don't move some of the food to the freezer in our basement. Stay focused, we are hatin' on my freezer drawers right now!
Back to the Bon Bons!
Here is Nom Nom Paleos original post. Chunky Monkey "Ice Cream" Bon Bons

I bought a melon baller so I could scoop the ice cream into perfect little balls. Then I realized I froze all of my bananas with the peel still on. Have you ever tried to peel a frozen banana? So, remember kids, peel your bananas BEFORE you freeze them.
Here is what I used to make a pretty good sized container of Chunky Monkey Ice Cream:
8 mushy, peeled bananas (she used ripe, I used a crap ton of mushy ones)
3 teaspoons of vanilla
1 tsp of cinnamon
1/2 teaspoon cardamom
1 bag dark chocolate chips (I used 60% but I would prefer to get 70%)
1/2 cup chopped walnuts (use your favorite nut)
Take your frozen bananas and throw them into a food processor or blender. I used my food processor and didn't take any pictures of it. Use your food processor imaginations!
Blend until smooth. I added in the vanilla, cinnamon and cardamom and gave it a few quick pulses to mix them in.
You can also do this in a blender.
Remove the "ice cream" to a bowl with a tight fitting lid. I have corning ware that came with rubber lids so you can put the containers in the fridge or freezer, straight from the oven. Or in this case, to make ice cream! Thanks Corning Ware!
Adding the cinnamon and cardamom are totally optional. The vanilla, cinnamon and cardamom combo just made this taste sweeter without any sugar. Try it before you add anything and add less or more of the spices. I also think my ice cream was sweeter since I used super ripe bananas.
Next up, pour in some dark chocolate chips. Why dark chocolate? Depending on how it's made, most dark chocolate has little to no milk or sugar added. It is a special treat for those on a paleo diet. I used to hate dark chocolate, but after I had my daughter I somehow became addicted to it. Go figure.
Next up, pour in some nuts! I used walnuts because my husband hates almonds. I love almonds. I thought of putting in pecans or macadamia nuts, but that was getting a little pricey for some possibly horrible ice cream. Not that walnuts are cheap, but if I was going to fuck this up, I'd be pissed if I wasted $6 worth of nuts.
Stir it all in and make it look nice. Next, taste it. Maybe taste it again. Once more for good measure. Ah, what the heck, no one will notice one more bite gone. Just do it quick before your child reminds you that you would let them try it first. I'm a good Mom!
Put a lid on that stuff and stick it back into the freezer until you are ready to eat it. If you were ready to eat it right after you finished making it, try and restrain yourself for at least 30 minutes.
I figure this could last in the freezer for a few weeks before it formed a protective layer of ice, but in this house, I give it two days. Especially because my son is home from camp now. And because my husband likes to stay up late and watch Futurama. And because Tuesday is my TV day and I get to watch True Blood.
Glad I threw some more bananas into the freezer this morning!
Go make some non-ice cream ice cream. It's healthy! Seriously.
