Good morning Monday! How was your weekend? Mine was pretty uneventful which sometimes is really nice.
Today we have another delicious smoothie made with a currently popular vegetable; kale. It is truly having a moment.
I know I mentioned my garden has mutant Kale. It just keeps growing. It’s taking over my tiny garden. This is not that Kale. This is baby kale which is not as tough as my mutant kale. Baby Kale grinds up nicely in my blender.
You know what else is having a moment; agave nectar. You can buy this at most grocery stores. I was planning on using maple syrup but my taste testers used it up and did not mention it. I think the agave nectar really worked with this combination.
After I took this photo I placed the kale, peaches, and banana in the freezer for a couple of hours and I think that makes for a creamier smoothie. Give it a try if you have the time.
- 2 cups fresh baby kale
- 1 cup frozen peaches
- 1 cup ripe banana equal to 1 medium
- 1 (1/2) to 2 cups almond milk
- 1 tablespoon agave nectar
- Place all ingredients in a blender and blend away. Serve immediately.
