I've become an enthusiastic member of the baby kale fan club, ever since I discovered my market had packs of mixed baby kale, all ready to be used in recipes. I bought those nearly every week all spring, until my own garden finally started producing some kale. If you're not quite as enthusiastic about kale, you may think I've gone too far with this recipe for Baby Kale and Mozzarella Quesadillas, but let me convince you with this: Sriracha-Ranch Dipping Sauce. When I tested this recipe with my nephew Jake, we gobbled up the quesadillas and I'm betting you will too. And what could be more perfect for Meatless Monday than quesadillas made with kale?
