Asparagus Bacon Stir Fry, Good for Breakfast Lunch or Dinner

As I kid, I hated asparagus. As an adult, if you try to feed me asparagus from a can, I still hate it. It's amazing the difference in taste when it's fresh. I absolutely love it. I especially love it cooked with bacon. I also really love stir fry. I make it with whatever vegetables and meats I have on hand but this is my all time favorite way. Here's the recipe.

 Asparagus Bacon Stir Fry

6 pieces of bacon fried crispy and set aside on a paper towel

2 TBS Butter 

8 stalks of asparagus, ends trimmed

10 cherry tomatoes halved

half a sweet onion sliced into rings ( I quarter the rings)

 Fry  6 strips of bacon until crispy and set aside on a paper towel to drain. In rendered bacon fat, add 2 TBS of butter. Slice half a sweet onion into rings and then quarter the rings, add to the hot bacon fat/butter on medium high heat. After you have washed the asparagus and trimmed off the tough end pieces, cut the rest into bite size pieces and add to the onions. Crumble the bacon and add it back to the pan and then add the tomatoes that have been washed and halved. Season with salt and pepper to your liking, toss for about 2 minutes and drain onto a paper towel. Plate and enjoy ! These are also delicious topped with fried eggs.
