Old Jamaican

Ingredients: |
1 1/2 oz. Appleton® Estate V/X Jamaica Rum 
3/4 oz. fresh squeezed lime juice 
1/2 oz. demerara syrup (2-1 sugar to water) 
Dash of orange bitters 
6 to 8 mint leaves 
Mint sprig 
Shake & double strain ingredients over fresh ice into a highball glass and add champagne, garnish with a mint sprig & serve.

 Old Fashion Reserva Exclusiva

Old Fashion Reserva exclusiva1
2 ½ ounces of Diplomatico Reserva Exclusiva 
1raw sugar cube 
3 dashes Angostura Bitters  
Orange slices 
Splash of club soda 
Place the sugar cube in a large  tumbler, or Old Fashioned glass, and drench in the bitters allowing the sugar to dissolve a  bit. Add the orange slice and muddle all  of the ingredients together. Fill glass with ice and top with the rum, stir and a splash of club soda. Garnish with an orange slice.

Dew Rum Runner

  Shellback silver DoubleRumDewRunner
1 oz. Shellback Silver Rum 
1/2 oz. Malibu 
1/2 oz. Midori  
1/2 oz. Fresh Pineapple Juice 
4 oz. Mountain Dew 
Cherry for Garnish 
Orange for Garnish 
Combine ice, rum, liqueurs and pineapple juice in shaker and shake well. Strain ingredients over fresh ice into large glass. Top with Mountain Dew and garnish with orange and cherry.

 Hurricane Passion Punch

Two 33.4-ounce boxes passion fruit juice (about 8 cups) 
One 46-ounce can pineapple juice 
3 cups light rum 
2 cups fresh orange juice 
2 cups dark rum 
1 cup grenadine 
1/2 teaspoon almond extract 
Orange wedges, for garnish 
Maraschino cherries, for garnish 
Mix the passion fruit juice, pineapple juice, light rum, orange juice, dark rum, grenadine and almond extract together in a gallon-size container. Chill until ready to serve. Pour the punch into a large punch bowl for serving. Serve in glasses filled with ice. Garnish with an orange wedge and a maraschino cherry.

Phusion Spicy Gimlet 
Created by Privateer’s mixologist, Kevin Martin (former bar manager of Boston’s award-winning Eastern Standard Kitchen & Drinks)

Phusion Spicy Gimlet1
2 oz. Privateer Silver Reserve Rum 
1 oz. Fresh Lime Juice 
1 oz. Simple Syrup 
1 slice Jalapeño 
6 cilantro leaves 
Small pinch of salt 
Combine ingredients into a mixing glass, add ice and shake until properly chilled and diluted.
Strain into a chilled cocktail glass. Garnish with a smacked cilantro leaf. 
Heat can be adjusted by adding more or less jalapeño.

Big Kablue-na

Big kablue na cocktail
1 ½ oz.  Bacardi Rock Coconut Rum 
½ oz. Blue Curacao 
½ oz. Lime Juice 
2 ½ oz. Hard Rock Pina Colada Mix 
Garnish: Pineapple wedge, lime wedge speared, mint sprig 
Shake all ingredients without ice. Pour into ice filled glass.

Dancing Pear

Copacabana 1940 Bottle1

2 oz. Copacabana 1940
0.5 Canton ginger liqueur
0.5 St. Germain elderflower
3 lime wedges
2 dashes few brothers bitters
Tablespoon of pear purée 
Muddle limes and shake everything. Pour over ice in mini pilsner. I would garnish with pear fan but orange slice works.

White, Pineapple, Splash of Soda

White & Pinapple - Splash of Soda1
1.5 oz. Captain Morgan White® Rum 
5 oz. pineapple juice 
1 oz. soda 
Fill a tall glass with ice. Pour in the Captian Morgan White® Rum. Top with the pineapple juice and splash of soda. Garnish with a lime wedge.

Sassy Sangrito

Sassy Sangrito 1
2 parts Skinnygirl® Sangria 
1 part light white rum 
Apple slices, diced 
Orange slices, peeled and diced 
6 fresh mint leaves 
 Mix sangria and rum over ice. Add in diced fruit. Stir, garnish with mint leaves and enjoy!

2 oz. Brugal Extra Dry Rum  
.5 oz. fresh lime juice  
.5 oz. pineapple juice  
.5 oz. Velvet Falernum  
1 dash pimento bitters 
Shake all ingredients with ice, strain into a rocks glass. 

Kingston Negroni

  Kingston Negroni1
1 oz. Campari® 
1 oz. Appleton® Estate 12 Year Old Jamaican Rum 
3/4 oz. Bianco Vermouth 
In a mixing glass, add Campari®, Appleton® Estate and vermouth to ice. Stir, strain into a martini glass and serve up with an orange twist.

Watermelon Passion 

Watermelon Passion1
2 parts Sauza® Blue Silver 100% Agave Tequila 
1 part Cruzan® Passion Fruit Rum 
2 parts watermelon juice 
1 part fresh lemon sour 
Watermelon balls (for garnish) 
Shake all ingredients with ice and strain over fresh ice in a tall glass. Garnish with watermelon balls.

Island Spice

Captain morgan island spice
1 oz. Captain Morgan Spiced Rum 
1 oz. Domaine de Canton Ginger Liqueur 
1 oz. lime juice 
1 oz. Monin Vanilla Syrup 
2 each dash of Angostura Bitters 
1 oz. Ginger Beer 
Garnish: Candied ginger, lime wedge speared 
Shake first five ingredients, pour into glass and top with Ginger Beer.

Amigos Mojito

Copacabana 1940 Bottle1

2 oz. Copacabana 1940
4 Muddled limes
2 teaspoons of brown sugar
Top ginger beer
5 leaves of cilantro
0.5 oz. Cointreau 
Muddle lime and sugar; add rest of ingredients except ginger beer. Add ice and stir. Top with ginger beer. Garnish with cilantro and lime.

Caliente Daiquiri

2 oz. Brugal Extra Dry Rum  
1 oz. Fresh Lime juice  
.75 Agave syrup (Equal parts Light Agave and water) 
3 slices jalapeño, muddled 
1dash Angostura bitters 
Combine all ingredients in shaker and shake. Double Strain over fresh ice in a rocks glass, garnish with jalapeño slice and float of Angostura bitters.

Devil Seam 
Created by Privateer’s mixologist, Kevin Martin (former bar manager of Boston’s award-winning Eastern Standard Kitchen & Drinks)

1 ½ oz. Privateer Silver Reserve Rum 
¾ oz. Coco Lopez Cream of Coconut 
¾ oz. Orange Juice 
¾ oz. Pineapple Juice 
Combine all ingredients in a glass and top with crushed ice. Garnish with freshly grated nutmeg.

Modern Mojito

Modern Mojito1
1 part Skinnygirl™ Prosecco 
1 part light rum 
1 tsp. agave nectar 
3 parts lime juice 
Splash of lime flavored sparkling water |
3 sprigs of mint 
Shake rum, lime juice and agave nectar in cocktail shaker with ice.  Top with Skinnygirl™ Prosecco and sparkling water, and pour into tall Collins glass. Muddle in mint leaves and enjoy!

Tiki Screwdriver

2 oz. Shellback Silver Rum 
1 ½ oz. Passion Fruit juice 
1 oz. orange juice 
½ oz. ruby red grapefruit juice 
1/4 oz.  lemon juice 
¼ oz. Grenadine—floated 
Garnish: Pineapple, orange and Marashino cherry 
Place on layer of ice in a highball glass.  Add pieces of pineapple and orange. Top with another layer of ice and an additional layer of pineapple and orange slices. Add liquids in order given, saving grenadine as float. Garnish on top with the cherry.

Spiked Agua Fresca

Captain's Agua Fresca1
1.5 oz. Captain Morgan White® Rum 
2 oz. Strawberry & Mint Agua Fresca (recipe follows) 
3 cucumber dials 
In a rocks glass, combine Captain Morgan White® Rum and Strawberry & Mint Agua Fresca with cracked ice. Slide the 3 cucumber dials down the sides of the glass.

Strawberry & Mint Agua 
¾ cup water 
2 cups of strawberries tops cut off and hulled 
2 tbsp. sugar 
3 oz. lime juice 
2 tbsp. fresh mint leaves 
Puree all ingredients in a high-speed blender. Strain through a fine mesh strainer. Chill and set aside until ready to use.
