David Holfve is the master taster at Gevalia in Gavle, Sweden. A 12-year veteran of the company, he travels around the world sourcing the best beans for Gevalia’s blends and single varietals. At the plant in Sweden he tastes 150-200 cups every day. Holfve began his career as a project engineer at Gevalia, where he trained to become a master taster for three years, developing his ability to not only taste the many flavor notes in coffee but to remember the differences, a process that he says is like learning how to play an instrument.
